Claire has been living with celiac disease since the age of 3. The only way to treat her symptoms, which include stomach pain, headaches, and exhaustion, is to eat gluten-free food.

In the piece, Claire details how she launched the Celiac Support Collective through her Laurel Capstone project to help bring gluten-free foods to food pantries so others who are suffering can have more access to the right foods to treat their illness.
